Sharing 20+ Years of Professional Baking Experience
Hi, I’m Annabelle! I started baking at age 8, and my passion for creating delicious treats has been a lifelong journey. I excelled in baking at my local vocational school, which laid the groundwork for a career spanning more than three decades. Over the years, I’ve worked in a variety of settings — from major retailers to small grocery stores, cupcake shops, and custom wedding cake businesses. In every role, I learned what works, what doesn’t, and how to run a kitchen efficiently, gaining experience across a wide range of baked goods, not just cakes and cupcakes.

I spent 11 years at a major retailer, progressing from apprentice to bakery manager, then managed a small grocery store while creating wedding cakes for a two-person business. Afterward, I focused on cupcake shops while continuing wedding cake production for seven years, and later opened my own bakery just before COVID. Though I had to close shortly after, each experience taught me invaluable lessons about systems, consistency, and scaling a business. I also ran a dog treat business and worked in a skilled care facility, further broadening my knowledge of production, quality, and operations.

All of this experience went into creating Cupcake Dream System and eBake Academy. My goal is to give bakers a solid foundation — a system that lets them start baking professionally right away. The recipes and tools are designed to be scalable, consistent, and adaptable, so once you’re confident, you can take them and make them your own.

I also plan to share my story in a monthly blog, including the good, the bad, and the horribly ugly — the real-world lessons I’ve learned along the way. Plus, I’ll share a monthly recipe to help bakers try new ideas, practice techniques, and build their skills consistently. Whether you’re a home baker, cottage food operator, or small bakery owner, I’m here to help you bake smarter, not harder, and turn your skills into confidence, creativity, and a growing business.
